Typically, crepes are prepared with eggs, flour, butter, milk, and a dash of salt. Although crepes are a staple food in France, they have recently gained popularity throughout the world. Crepes are a universal food, but they take on a variety of forms in different regions.

This celebration, also known as “day of pancakes,” is linked to the Christian celebration of Candlemas. On this day, crêpes are prepared in every kitchen across France. It’s because pancakes have come to represent good fortune.

While many Americans spend February 2 huddled inside to wait for a groundhog to emerge from its burrow, the French have a much more enjoyable tradition.

On February 2, also known as Candlemas, the French celebrate La Chandeleur, a holiday centred around the consumption of crêpes.

The Catholic religious holiday occurs exactly 40 days after Christmas and has its roots in a pagan harvest festival that marked the middle of winter before Christianity.

Because of the merging of these two celebrations, today’s La Chandeleur is centred on the crêpe, whose spherical form symbolises the sun and the endless cycle of life, while the act of eating and sharing with others honours the historical custom of popes providing food for the poor on February 2.

It’s Not Uniformly Traditional Across The Country.

In different parts of France, crêpes are made with different ingredients and have a different look and flavour. Galette-saucisse (sausage galette), a savoury buckwheat pancake wrapped around a pork sausage, is a common street food in Brittany.

In the region of Ille-et-Vilaine, this snack is especially popular.

The matefaim or matafan is a staple food in the regions surrounding Lyon (Rhône), Savoie, and some of Ardèche.

Traditionally, potatoes were used in this recipe for thick crêpes, but nowadays apples are used in a sweet variation.

Meanwhile, in Monaco, you can order crêpe Suzette, which features a caramelised sugar and butter sauce, orange juice, rind, and Grand Marnier, triple sec, or Curaçao liqueur that is flambéed before being poured over the pancakes.

It is unclear where this dish first appeared, but legend has it that a young waiter preparing dessert for the Prince of Wales (later King Edward VII) at the Café de Paris in Monte Carlo accidentally set fire to the sauce, uncovering the dish’s now-famous flavours.
